This prestigious award honors Guillermo’s exceptional enthusiasm, community spirit, and commitment to fostering collaboration among local businesses.

About Taquería El Pelayo

Founded in March 2015, Taquería El Pelayo has become a cornerstone of Vallejo’s food scene, offering a unique menu of innovative and authentic Mexican dishes not commonly found at other taquerias. Customer favorites include Steak and Shrimp Super Burritos, Pelayos Crispy Tacos, and the one-of-a-kind Birriaquiles. Guillermo’s dedication to quality ingredients, excellent service, and creative flavors has set his business apart.
Before launching Taquería El Pelayo, Guillermo gained valuable experience in the food truck industry while working with his uncle, Filiberto Pelayo, in Huntsville, Alabama. He later opened a food truck in Lafayette, Louisiana, before returning to California to bring his vision to life in Vallejo.
In addition to serving great food, Guillermo is passionate about giving back. Taquería El Pelayo offers affordable Taco Tuesday specials as a way to thank the community and provide more accessible dining options.

A Commitment to Collaboration and Growth

Guillermo’s involvement with the Solano Hispanic Chamber of Commerce has inspired a collaborative approach to business. "Getting involved with the Chamber has shown me that we can work with other businesses in the same city and grow together—not as competitors, but as a community," he said.

Looking ahead, Guillermo plans to expand Taquería El Pelayo to new locations, including Fairfield and Vacaville, where he hopes to introduce his signature dishes to even more customers. His advice to new Chamber members:
"Get involved with the community and try to make an impact together. Your city will grow, more people will visit, and they’ll remember your signature dish. I promise they’ll come back!"
